Epic Beyond Belief.

Crammed with hints of spicy juiciness. This gastronomic delicacy is a plate full of goodness, from the most unexpected sources.

A totally flavorsome FUN guy. And so MUSH more!

What do our vegan keto mushroom burgers bring to the table?

Have you heard that saying, “Let food be your medicine and medicine be your food’?

Never was a statement more true than when applying it to our Beyond Amazing Vegan Keto Mushroom Burgers.

Thanks to the Portabella mushroom, this vegan keto burger could well be a healing aphrodisiac, with adaptogenic powers that revitalize, renew and replenish.

Sometimes the truth seems whack!

We make our “patties” with a combination of vegan keto ingredients that tick all the boxes.

Almond flour and flax seeds give us the essential high-fat content. They are both rich in potassium and low in carbs. At 2g net carb per 100g, flax seeds are virtually carb free.

How much fat is there in almond flour?

47g of fat per 100g = 73%DV

How much fat is there in flax seeds?

42g of fat per 100g = 64%DV

The garlic and onion are blood purifiers, with anti-bacterial properties that keep our immune systems fired up and ready to go.

Tofu, and you may be surprised to hear this, is actually not that high in net carbs so it’s an awesome addition to many vegan keto recipes. Only a small percentage of people will experience adverse reactions to soy and soy products.

I know, for instance, that if you have thyroid issues, soy and soy products do you no favors. But often using tofu and tempeh is okay. Like any eating plan that a person decides to commit to, you need to stay in tune with what your body tells you.

Always use non-GMO tofu and tempeh. But I’m not gonna lie, organic tofu and tempeh is expensive.

But let’s get to the star of the show. Enter the Portabella Mushroom. Drum roll, please.

How The Portobella Mushroom Came To Be

Prehistoric Europeans ate mushrooms.

We know this because “a bowl of field mushrooms were found in a Bronze Age house near Nola, Italy.”

Mushrooms were considered food fit for kings, and peasants were not allowed to eat them.

Did you know that our beloved Portobella is actually a fully grown cremini?

The Japanese knew long before the West that mushrooms held medicinal powers and adaptogenic properties. (Which explains why these mushrooms may assist with a large range of health issues)

The Portabella became popular in the 1970s when vegetarianism experienced a resurgence. They are considered an American invention that rose to fame through clever marketing.

Of all the shrooms, Portabello are the best ones to substitute for meat. They are far more nutritional than cruel beef burgers, and are extremely high potassium.

They contain ergosterol and chitin. The first helps the body to access Vitamin D2 and chitin is an immune system booster.

Big shout out to The Mushroom Lady for the fun facts.

Not so fun fact –

Q. How many gallons of water does it take to produce one beef burger patty?

A. 660 Gallons!!!

This makes the Beyond Amazing Vegan Keto Mushroom Burgers the most ethical, eco-friendly burger in the universe! A killer burger that’s cruelty-free. Try wrap your head around that one.

How Easy Is It To Make Beyond Amazing Vegan Keto Mushroom Burgers?

These burgers are extremely easy to make, and fast.

They’re the perfect weekend meal to whack together before you hit the beach for a volleyball session with your buddies.

Will This Recipe Break The Vegan Keto Bank?

Overall I’d have to say this recipe could slightly wound the bank. But definitely won’t break it.

Almond flour, coconut aminos and non-GMO tofu all cost a fair bit.

Are Mushrooms Keto Approved?

Portobella mushies exceed expectations as a substitute for ground meats. They are nutrient dense and have ample amounts of:

  • Niacin
  • Pantothenic acid
  • Selenium
  • Zinc
  • Copper
  • Potassium
  • Riboflavin

The vitamin D increases when you grill Portobellas. That’s a huge bonus. So often we lose some of the goodness through cooking or heating of any kind.

(Have you noticed I am spelling Portobella two ways. Apparently this potent fungi comes with some controversy around the spelling of its name. You can spell it portabella/ portobella/ Portobella.)

You get the benefits of flax seed which is high in:

Potassium – 100g = 813mg. 23%DV

Protein – 100g = 18g. 36%DV

Calcium – 25%DV

Iron – 31%DV

B6 – 25%DV

And don’t forget the onions and garlic. They have anti-inflammatory properties.

Portabella mushrooms are also anti-inflammatory.

Keto Vegan Secret Ingredient

Coconut Liquid Aminos.

This brand, Bragg’s Coconut Liquid Aminos, is a trusted favorite that’s been going since 19

Like tamari, it is also fermented, which brings prebiotic benefits.

And like tamari it is also gluten/wheat free.

A sublime substitute for soy sauce. And a good source of protein. Coconut Aminos get used in Vegan dishes to increase umami and has 17 naturally occurring amino acids.

And yes its pretty pricey but well worth it. Coconut aminos are low in sodium. Match 90mg of sodium per teaspoon of coconut aminos against over 230mg of sodium per teaspoon of soy sauce. Wow!

Tip: Don’t be surprised if you open the bottle to a fizzy liquid. This is perfectly natural and is due to the fermentation process. Keep refrigerated to reduce this effect. It doesn’t hamper the benefits at all.

If you buy coconut aminos online choose this brand. It is a fair trade product, is totally organic and is sustainably harvested from coconuts that have been grown in mineral rich volcanic soil.

  1. Hi! Just a note- tofu is not Whole30 approved, so this burger isn’t Whole30 compliant. But it does sound like a good recipe to try when you aren’t in a round of Whole30.

  2. Is there any possibility of having actual volume measurements of ingredients – so as to have an idea of how this worked for you. You know – 1 onion or 1 carrot or large mushroom could be….. hmmm. Thanks so much.

  3. One tip on Flax seeds, you need to grind them to Get the Benefits… I use a nutribullit for grinding of seeds
