We make our “patties” with a combination of vegan keto ingredients that tick all the boxes.

Almond flour and flax seeds give us the essential high-fat content. They are both rich in potassium and low in carbs. At 2g net carb per 100g, flax seeds are virtually carb free.

I know, for instance, that if you have thyroid issues, soy and soy products do you no favors. But often using tofu and tempeh is okay. Like any eating plan that a person decides to commit to, you need to stay in tune with what your body tells you.

Did you know that our beloved Portobella is actually a fully grown cremini?

The Japanese knew long before the West that mushrooms held medicinal powers and adaptogenic properties. (Which explains why these mushrooms may assist with a large range of health issues)

The Portabella became popular in the 1970s when vegetarianism experienced a resurgence. They are considered an American invention that rose to fame through clever marketing.

Of all the shrooms, Portabello are the best ones to substitute for meat. They are far more nutritional than cruel beef burgers, and are extremely high potassium.

They contain ergosterol and chitin. The first helps the body to access Vitamin D2 and chitin is an immune system booster.

Will This Recipe Break The Vegan Keto Bank?

Overall I’d have to say this recipe could slightly wound the bank. But definitely won’t break it.

Almond flour, coconut aminos and non-GMO tofu all cost a fair bit.

Why It Passes The Vegan Keto Meal Plan Requirements

Portobella mushies exceed expectations as a substitute for ground meats. They are nutrient dense and have ample amounts of:

  • Niacin
  • Pantothenic acid
  • Selenium
  • Zinc
  • Copper
  • Potassium
  • Riboflavin

The vitamin D increases when you grill Portobellas. That’s a huge bonus. So often we lose some of the goodness through cooking or heating of any kind.

(Have you noticed I am spelling Portobella two ways. Apparently this potent fungi comes with some controversy around the spelling of its name. You can spell it portabella/ portobella/ Portobella.)

You get the benefits of flax seed which is high in:

Keto Vegan Secret Ingredient

Coconut Liquid Aminos.

Like tamari, it is also fermented, which brings prebiotic benefits.

And like tamari it is also gluten/wheat free.

A sublime substitute for soy sauce. And a good source of protein. Coconut Aminos get used in Vegan dishes to increase umami and has 17 naturally occurring amino acids.

And yes its pretty pricey but well worth it. Coconut aminos are low in sodium. Match 90mg of sodium per teaspoon of coconut aminos against over 230mg of sodium per teaspoon of soy sauce. Wow!

Tip: Don’t be surprised if you open the bottle to a fizzy liquid. This is perfectly natural and is due to the fermentation process. Keep refrigerated to reduce this effect. It doesn’t hamper the benefits at all.

Ingredients

  • 4 large Portobello mushrooms, diced
  • 3 Garlic cloves, diced
  • 1 yellow onion, finely diced
  • 1 carrot, diced
  • 4 tbsp almond flour
  • 1 tbsp avocado oil
  • 1 cup firm tofu, crumbled
  • 2 tbsp flax seeds, soaked into water
  • 1 tbsp coconut aminos
  • 1 tbsp Kelp powder
  • Toppings: Micro-greens, mixed greens, tomato, pickled onion, cashew mayo

Instructions

  1. reheat the oven to 200C/400F.
  2. Line a baking sheet with parchment paper.
  3. Heat the avocado oil into a non-stick skillet and add the mushrooms, carrot, onion and cloves.
  4. Cook over medium heat for 10 minutes, stirring frequently, until the mushrooms are tender and all their liquids evaporated.
  5. Transfer into the food processor and pulse two or three times, making sure to not over-process.
  6. Put the mixture into a bowl, add the flax seeds, crumbled tofu, almond flour, kelp powder, coconut aminos, and mix well to obtain a sticky mixture.
  7. Shape the mixture into burgers and line them onto the baking sheet.
  8. Drizzle with avocado oil and bake for 20 minutes, then flip over and bake 10 minutes more.
  9. Assemble with micro-greens, tomato, pickled onion and cashew mayo and serve warm.
