Melting and tempering chocolate can be a bit tricky and requires your best buddha-esque patience. Take your time and melt your choc very gently using a lightly simmering pot of water with a bowl over the top – ensure the bowl never touches the water and the choc is stirred gently as it melts.

  • 2 cups almond flour
  • 2 tbsp Ener-G Egg replacer
  • 2 tbsp ground flax
  • 1 cup unsweetened dark chocolate, melted
  • 3 tbsp coconut oil
  • 1/2 cup coconut cream
  • 1/4 cup brewed coffee, chilled
  • 2 tsp stevia powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp fresh lemon juice
  • 1/4 tsp salt

For the Frosting

  • 2 ripe avocados, peeled
  • 1/2 tsp stevia powder
  • 1 tbsp cacao powder
  • 2 tsp coffee grounds

To garnish: fresh berries


  1. Preheat the oven 175C/356F.
  2. In a large bowl mix the dry ingredients (almond flour, egg replacer, flaxseed, stevia, baking powder and soda, salt).
  3. Add the liquid ingredients (melted chocolate, coconut milk, coffee, coconut oil, lemon juice) and whisk to obtain a batter.
  4. Line a cake pan with parchment paper and transfer the batter into the pan.
  5. Bake for 25 minutes, then remove from the pan and let cool completely.
  6. Meanwhile, prepare the frosting.
  7. Add the frosting ingredients into a food processor and pulse to obtain a creamy mixture.
  8. Spread the frosting on top of the cake, decorate with fresh berries and serve.
