Pack a few extras into your lunchbox, offer them to a friend or colleague, and get ready for the look of surprise and delight on their face when they realize they can enjoy such yummy treats.

For the Filling

  • 2 tbsp Coconut flour
  • 2 tbsp Almond flour
  • 1/2 cup Coconut cream
  • 3 tbsp Coconut oil
  • 4 tbsp Peanut Butter
  • 1 tbsp Erythritol

For the Chocolate Coating


Instructions

  1. Melt the chocolate and coconut oil into a Pyrex bowl over a pot with boiling water, stirring frequently.
  2. Remove from the heat, transfer into a medium bowl and set aside.
  3. Add the filling ingredients into the food processor and pulse to obtain a dough.
  4. Scoop the dough into balls, then dip each ball into the chocolate sauce, to coat evenly.
  5. Arrange the balls onto a plate, then freeze for at least 30 minutes.
  6. Remove from the freezer and serve, or keep in the refrigerator in an airtight container for up to two weeks.
