The Origin of this Recipe

Teriyaki is a culinary technique from Japanese cuisine where foods are broiled or grilled while being basted in a marinade. The word teriyaki is made up of the noun ‘teri’ which refers to a shine or luster given by the sugar, and the verb ‘yaki’, which refers to the cooking method of grilling or broiling. The teri is traditionally made by mixing and heating soy sauce, sake or mirin, sugar or honey and sometimes ginger. The sauce is boiled and reduced to the desired thickness, then used to marinate the food which is then grilled or broiled.

Ingredients

  • 1 &1/2 cup firm tofu or tempeh, cut into cubes
  • 1 medium broccoli heat, cut into small florets
  • 1 carrot, diced into thin strips
  • 2 celery stalks, diced
  • 1 yellow onion, diced
  • 1 tbsp avocado oil

For the Teriyaki sauce

  • 1 tbsp nut butter of choice (peanut butter gives the best taste)
  • 1 tbsp sesame oil
  • 1 tbsp coconut aminos
  • 2 tsp hot sauce
  • 1 tbsp freshly squeezed lime juice
  • 2 tsp erythritol
  • 1 tsp freshly grated ginger
  • 1 tsp garlic powder
  • 4 tbsp water
  • Toasted sesame seeds, to serve

Instructions

  • Add teriyaki sauce ingredients into the blender and process to obtain a smooth liquid.
  • Add the tofu or tempeh cubes into a medium bowl, drizzle half of the sauce on top, and toss to coat evenly. Set aside for 15 minutes.
  • Heat the avocado oil into a wok , add the marinated tofu and cook for 5 minutes more over high heat, gently stirring frequently, until golden. Transfer into a medium bowl.
  • Add the veggies and cook for 5 minutes over high heat, stirring frequently, until cooked but still crunchy.
  • Transfer the veggies into the bowl, mix with the tofu/tempeh.
  • Drizzle the rest of the teriyaki sauce, garnish with sesame seeds and serve warm.
