- 1 shallot, diced1 cup walnuts
- 1/2 cup hemp hearts
- 2 tbsp ground flax seeds
- 1 small beetroot, peeled and grated
- 1 tbsp nutritional yeast1 tsp smoked paprika
- 1 tbsp fresh lemon juice.
- 1 bunch fresh parsley, chopped
- 1/2 tsp garlic powder
- Coconut oil, to fry
- Pickled red onion
- Dairy free yogurt
Add the walnuts into the food processor and pulse to obtain a chunky crumble. Add the rest of the ingredients and pulse to get a dough. Shape the burgers using your hands and line them on a plate. Heat 1 tbsp coconut oil into a non-stick skillet, add the burgers, cook for 3 minutes on one side then flip and cook 3 more minutes. Assemble with red onion, micro-greens and yogurt to serve.
