Recipe Origins

There is a critical, and rather interesting core ingredient in this recipe and lot of vegan keto cooking that doesn’t get much press – nutritional yeast. How Easy Is It To Make This Recipe?

​The only real prep involved is measuring out your herbs and spice, roughly chopping your cauliflower and cooking and straining well the cauliflower rice. The rest is handled by your food processor and oven. All together it’s around 30 mins of cooking time and 10-15 mins of prep.

Ingredients

  • ​1 medium cauliflower head, cut into florets
  • 2 tbsp nutritional yeast
  • 2 tbsp flaxseed, ground
  • 4 tbsp water (mixed and set aside for 15 minutes)
  • 1 tbsp coconut oil
  • 1 tsp turmeric1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/4 tsp salt

Instructions

  1. ​Preheat the oven to 175C/356F.
  2. Add the cauliflower into the food processor and pulse to obtain the rice texture.
  3. Bring water to boil into a medium pan, then add the cauliflower rice and simmer for 5 minutes over low heat to soften.
  4. Strain the water and use a fine strainer or a cheesecloth to remove the excess water – this is a very important step because you want the cauliflower as dry as possible for the chip mixture to be the right consistency.
  5. Transfer the strained cauliflower back into the food processor with the remaining ingredients and process to obtain a dough.
  6. Line a baking sheet with parchment paper and scoop the cauliflower into little balls, lining them on the baking sheet with at least 1.5 inches between them.
  7. Add a second parchment paper sheet on top, and use a rolling pin to flatten the balls into very thin chips.
  8. Gently remove the top layer of parchment paper.
  9. Bake for 20 minutes, then flip over and bake for 15 minutes more.
  10. Remove from the oven and set aside to cool completely before serving.
