- 1 ½ cups shredded coconut
- ½ cup coconut oil, melted
- ¼ cup monk fruit syrup
- Combine all ingredients into a large mixing bowl.
- Line baking tray or a big plate with parchment paper.
- Form small balls with your hands and place them on a parchment paper on a distance 1-2 inches.
- Press down onto each cookie using a fork. Refrigerate until firm.
