Jack and His Green Bean Fries
Once upon a time…. there was a boy who was down on his luck. So down and out was he that he could not even afford a plate of steaming hot french fries from the corner deli. As his tummy rumbled and his mind raced, he spotted a garden overflowing with…you got it! Green Beans! So Jack (that was the boy’s name) snuck in through the gate and plucked three handfuls of the delicious, fresh, green beans.
He ran as fast as his legs would go, all the way home. And handed the bounty over to his overworked and under-appreciated mother. Her face lit up. “Well done, me boy,” she said. I can rustle us up a plate of Green Bean Fries in no time. But alas! She had no bread or flour or eggs. Oh, woe!
But what she did have was just perfect. She whipped out the last bit of almond milk, ground up some flaxseed into flour, and merrily mixed the nutty milk and ground flax together and let it stand.
Then she took out her nutritional yeast flakes, paprika, garlic powder, salt and pepper, and almond flour (they just happened to have an almond tree in their yard, hence the almond milk and flour….) mixed it all up and the rest, as they say, was history. Little did she know that, fast forward to the 21st century, her simple country-style green bean fries would become the Vegan Keto Green Bean Fries of the future! And they all lived happily ever after…

Vegan Keto Green Bean Fries Secret Ingredient
For this recipe, it is the ground flax that wins the day. Flaxseed flour, or meal, is an excellent binder. So for our green bean fries, the addition of the flaxseed flour to the almond milk does what the egg would do in the traditional recipe.
We use Ground Flax every day by adding it to breakfast bowls, smoothies, and even our soups. This brand, Healthworks, like many others, is organic, cold-milled (to preserve the goodness), and loaded with omega 3, lignin, and fiber.

- 3 cups green beans
- 2 tbsp Ground Flaxseeds
- 4 tbsp almond milk
- 1 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp paprika
- 1 cup almond flour
- Salt & pepper to taste
- Preheat oven to 400℉ / 200℃ degrees.
- Line baking tray with parchment paper.
- In a bowl combine flax seeds and almond milk. Leave for 5 minutes.
- Combine almond flour, nutritional yeast, and spices in a second bowl. Mix well.
- Immerse great beans one by one in the flax seeds and transfer to the flour mix. After fully covered, place on a tray.
