Vegan Keto Tikka Masala

Ingredients

For cauliflower:

  • 1 medium cauliflower
  • 1 tbsp olive oil
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper

 

For sauce:

  • 1 ½ cups crushed tomatoes
  • ½ cup coconut cream
  • ½ cup water
  • 4 tbsp virgin coconut oil
  • 1 tbsp garam masala
  • 1 tbsp minced ginger
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 2 tbsp cup minced cilantro
  • 1 small onion
  • 2 garlic cloves

Instructions

  1. Preheat oven to 220 / 425.
  2. Cut cauliflower into florets.
  3. Place in a mixing bowl and toss with oil and spices until the florets are well seasoned.
  4. Place cauliflower florets on a silicone baking sheet and bake for 30 minutes.
  5. Heat oil in a frying pan. Add onion, ginger, and garlic. Cook until golden.
  6. Add spices and stir well.
  7. Pour crushed tomatoes, water, and coconut cream. Cook for 10-15 minutes until thickens.
  8. Add cauliflower and minced cilantro. Mix well.
