Our vegan keto tofu breakfast scramble is a zesty combination of hot food and warm spices, topped with cool avocado and micro-greens. The exhilaration of warm topped with cool extends beyond your sense of taste. Invite your sense of sight to enjoy the bowlful of color too.  All of this is bound to get your mind in the zone for a wonderful day.


1 cup Firm or extra-firm tofu, crumbled

1 Red bell pepper, diced

1/2 cup Frozen Spinach, defrosted

1 yellow onion, finely diced

2 garlic cloves, diced

1 tbsp Avocado oil

1/2 tsp Cumin powder

1 tsp Turmeric powder

1/2 tsp Red chili flakes

1/4 tsp Salt

To serve: avocado slices, hot sauce, micro-greens


Heat the avocado oil into a cast iron skillet over medium heat, then add the onion, garlic, bell pepper and spinach.

Cook for 7 minutes stirring frequently, then add the crumbled tofu and mix to combine.

Add the spices and salt, then cook for 5 more minutes.

Divide the mixture into serving bowls, top with avocado slices, drizzle hot sauce, garnish with micro-greens and serve hot.
