Vegan Low-Carb Carbonara

  1. Boil water in a pot and cook noodles according to the package instructions. Or use pre-cooked noodles.
  2. Place a frying pan with oil on medium heat. Dice onion and garlic, cook until golden.
  3. Add coconut cream and nutritional yeast, mix well and cook for 3-5 minutes or until it thickens.
  4. Transfer noodles to the pan, add sun-dried tomatoes, and vegan bacon bits. Season with salt and pepper. Stir and cook for 2-3 minutes.
