Buckwheat Groats or if you prefer, ready-ground buckwheat flour.  We tested this recipe using both the store-bought flour and home-ground flour (we ground it in a coffee grinder – it only took 30 seconds). You can buy buckwheat flour in stores, but grinding your own buckwheat groats results in a less bitter flavor and lighter, more appealing color.  Note: Buckwheat is not keto-friendly. It is a safer option for those with gluten sensitivities to chemically mutated commercial grains. But is should still be in the cheat day category.

Monk Fruit ChocZero’s Maple Syrup, can be used as a replacement for refined sugar and unhealthy syrups. This is the best tasting maple syrup replacement I’ve found. But it is more of a low carb minor cheat day option as it does contain corn starch and should not be lavishly poured onto any recipe and expect ketosis to be preserved.
